Ingredients

Skewers

  • 1 firm block of Tofu
  • Half a Green Pepper
  • Half a Red Pepper
  • 1 Red Onion

Marinade

  • 4 tbs Agave nectar
  • 4 tbs Soy Sauce/Tamari/Coconut Aminos
  • 1 tsp Dried Chilli Flakes
  • 1 tsp Fresh Ginger Minced
  • 1 tsp Mixed Sesame Seeds

Pickled Red Onion

  • Half Red Onion Sliced Finely
  • 2-3 tbs Rice Vinegar
  • 1 tsp Dried Chilli Flakes
  • 1 tsp Soy Sauce/Tamari/Coconut Aminos
  • Fresh Coriander to Garnish

Method

  • First up make the marinade & make the pickled Red Onion.
  • To make the marinade combine all the marinade ingredients in a mixing bowl.
  • For the Red Onion, combine all the ingredients in a small mixing bowl and place in the fridge.
  • Next up, get yourself around 5-6 skewers. Cut the Tofu, Peppers & red onion into similar size shapes. We cut the Tofu into around 2cm cubes. 
  • Carefully place the pieces onto the skewers then place onto a baking tray. Once you have completed all the skewers, pour over the marinade making sure everything has a nice coating. Top tip — set some of the marinade aside to pour over when grilling.
  • Allow to marinade in the fridge for no less than 30 mins, but no more than 5 hours.
  • To cook, Heat an oiled griddle pan over a high heat until smoking hot. Then carefully add the skewers. Grill for 1-2 mins on each side, these taste delicious slightly charred as it adds an amazing smokey flavour, especially when the Agave caramelizes!
  • Serve with fresh coriander and the pickled red onion. Enjoy!
