French Toast with Mixed Berries and Bananas

Ingredients

French Toast

Light frying spray (or a little vegetable oil/dairy free butter)
2 thick slices of sourdough bread
(don’t worry if it’s slightly stale, that won’t matter when it’s cooked!)
120ml plant milk (I like oat or almond)
30g plain white flour



1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp agave (or maple syrup)
1 tsp milled flaxseed
A pinch of ground nutmeg

Toppings

100g mixed berries
(blueberries, raspberries,
blackberries etc)
1 medium banana sliced
50ml agave (or maple syrup)
1 tsp vanilla extract
1 tsp ground cinnamon

Method

  1. Grab a bowl and throw all the ‘toppings’ ingredients together. Mix well with a spoon and set aside.
  2. In a small bowl, whisk the plant milk, vanilla and agave together, then add the flour, cinnamon, milled flaxseed and nutmeg, whisking well until smooth.
  3. Pour the mixture on to a plate so that you can easily dip your bread in.
  4. Heat a non-stick pan with a few sprays of light frying spray (or oil/butter).
  5. Dip the bread in the liquid mixture, coating both sides well and place on the hot frying pan immediately. Fry each side until golden brown and crispy!
  6. Plate up and top with the coated berry & banana mixture and enjoy!
