Lentil Burger with Sweet Potato Harissa Fries

Ingredients

Lentil Burger

Makes 6-8 burgers so enough for freezing too!
200g dry lentils
750ml water
Half sweet red pepper (diced)
One carrot (finely grated)
Half an onion (diced)
65g rolled oats
65g bread crumbs
(Frozen sweetcorn, peas or even quinoa can be a great addition to this recipe – play around with different ingredients to see what you like best)

Sweet Potato Fries

2-3 large Sweet potatoes
1-2 tsp Harissa powder (or increase to taste)
Dash of Olive oil
1 TBSP Sea salt
1-2 TBSP Sugar (optional, but gives a lovely glaze if you choose to use it)

Method

Lentil Burger

Gently boil the lentils in the water for approx 30 minutes until all or most of the water is gone.

Mix the onions, red pepper and carrots in a frying pan and brown over a low heat until softened.

Add the lentils, rolled oats, breadcrumbs, and season to taste.

Whilst the mixture is still warm, form into burger patties to the size and shape you prefer.

Once you have molded the shapes you are happy with, either shallow fry the burger for 1-2 minutes on each side, or bake at 200c for 15 minutes.

Add garnish to finish.

Sweet Potato Fries

Slice your sweet potatoes into desired shape, trying to keep each one an equal size to ensure they cook evenly.

Mix the sweet potato in a bowl with the olive oil, sugar, harissa, and salt ensuring each is coated thoroughly.

Bake at 190c for 30-40 minutes, turning half way. Enjoy!
