Vegan Cheesy Courgette Savoury Muffins
Ingredients
1/2 cup plain flour
1 tsp baking powder
1/2 tsp salt
1 tsp garlic powder
1 tsp paprika
1/2 tsp chilli flakes
1/2 tsp black pepper
1/4 cup soya milk
1 tsp dijon mustard
1 tbsp margarine, melted
1 cup courgette, grated
and drained
1/4 cup onion, finely chopped
50 g vegan cheese, grated
Method
- Preheat the oven to 220C | Gas Mark 7. Line a muffin tray with 4 muffin cases.
- In a large mixing bowl, combine the flour, baking powder, salt and seasonings.
- Add the rest of the ingredients and mix until a homogeneous stiff batter forms.
- Spoon the batter into the muffin cases and bake for around 20-23 minutes or until golden brown and cooked through.
Allow to cool before serving.
